Dik & Schil Bakkie Pleur Koffielikeur Wat begon als een universitair project voor 3 studenten, is uitgegroeid tot Dik&Schil, een bloeiend bedrijf waarin duurzaamheid centraal staat. Hun lekkere drankjes geven een tweede leven aan de overgebleven koffiedik en sinaasappelschillen uit de horeca die normaal gesproken in de prullenbak belanden. ''Wij willen laten zien dat duurzaamheid ook leuk kan zijn en dat circulariteit kan leiden tot fantastische producten'' – Dat hebben ze zeker bereikt. Dik&Schil Bakkie Pleur Koffielikeur wordt gemaakt van koffiedik, exclusief van Moyee Coffee. Deze koffie is niet alleen heerlijk, maar ook de Fair Trade en Fair Chain (waar het branden en verpakken van de bonen in het land van herkomst gebeurt, waardoor de lokale gemeenschap meer inkomsten krijgt). Door gebruik te maken van extra donker gebrand koffiedik, heeft deze koffielikeur de volle smaak van koffie en een vleugje sinaasappel, met toevoeging van overgebleven sinaasappelschillen, afkomstig van het maken van vers sinaasappelsap. Er is heerlijke noten en een subtiele rokerigheid, die diepte toevoegen, en een zachtheid van vanille. Meer van Dik & Schil Perfect Serve Espresso Martini is een favoriete cocktail voor een koffielikeur – maar wat dacht je van een spin op een Negroni? Om een Dik&Schil Coffee Negroni te maken, vult een tumbler met ijs en schenkt 25 ml Bakkie Pleur, 25 ml Circular Gin, 15 ml Orangecello en 15 ml Campari. Roer goed door en voeg ter garnering een schijfje sinaasappel toe.

Dik & Schil Circulaire Gin What started as a university project for 3 students, has developed into Dik&Schil, a flourishing business with sustainability at its core. Their tasty drinks give a second life to the leftover coffee grounds and orange peels from the hospitality industry that would usually end up in the bin. ‘‘We want to show that sustainability can also be fun and that circularity can lead to fantastic products’’ – They have definitely achieved that. The Dik&Schil Circulaire Gin takes unwanted orange peels from hospitality outlets and the pruned cuttings from Koppert Cress (suppliers of freshly-sprouted seedlings, aromatic edible leaves and flowers) and turns them into a unique, soft and spicy gin. The residue leaves are perfect in combination with the orange, each bringing something different to the mix. Kaffir Lime leaves enhance the recipe with their strong citrus taste, Cardamom leaves add body and a warming taste, whilst the Shiso leaf with its strong, mysterious flavour (reminiscent of mint, basil, tarragon, cilantro, cinnamon and anise) adds character. The velvety oils, citrus and anise combine for a taste like no other. More from Dik & Schil Perfect Serve Dik&Schil Circulaire Gin is soft enough to enjoy neat. For a refreshing G&T, fill a glass with ice and add 50ml Circulaire Gin. Add 150ml elderflower tonic water (we like Fentimans with ours) and garnish with thinly sliced cucumber and a slice of grapefruit. For the cocktail lovers, combine with another of Dik&Schil’s great spirits in a Negroni. Add equal quantities (30ml) of Circular Gin, Orangecello and Campari to a tumbler with ice, and a slice of orange to garnish.
