Belsazar Red Vermouth Met de wens om Vermouth een eigentijdse draai te geven, heeft Belsazar de creativiteit en vitaliteit van Berlijn overgenomen en samengevoegd met de smaken en knowhow uit het Zwarte Woud in Duitsland. Ze gebruiken druiven en wijnen van zorgvuldig geselecteerde wijnhuizen om de basis van hun vermout te bouwen. Hieraan voegen ze alsem (en essentieel bestanddeel van vermout) toe, maar ook andere inheemse kruiden om een natuurlijk karakter te garanderen. Tot slot is hun finishing touch de toevoeging van een 'scheutje' fruitbrandewijn van de Schladerer-distilleerderij (die al fruitbrandewijn produceert sinds 1844). Na het combineren van de verschillende componenten wordt de resulterende vermout tot drie maanden gerijpt in neutrale stenen vaten. Hierdoor kunnen de complexe smaken en aroma's zich ontwikkelen (de stenen vaten zorgen ervoor dat er geen extra smaken ontstaan, die zouden optreden bij houtrijping). Hoewel er veel Red Vermouth's beschikbaar zijn, maakt Belsazar die van hen net dat beetje anders. Hun basiswijn is een mix van Muscat & Red Wine Cuvee. Het heeft een heerlijk kruidig aroma met sinaasappels, pruimen en donkere chocolade. In de mond is er een scherpe kruidigheid (van nootmuskaat, kruidnagel en kaneel), vergezeld van vanille, gekonfijte sinaasappel en bittere chocolade. Zoet en vol, het eindigt met een bitterzoete hint van alsem. (Het 'geheim' in hun rode vermout is een scheutje kersenbrandewijn van Schladerer!). Meer van Belsazar Perfect Serve Heerlijk wanneer geserveerd met Tonic Water, en we raden Franklin & Sons Tonic aan (het laat de smaken in de vermout goed doorkomen). Neem een glas gevuld met ijs en voeg 50 ml vermout toe en giet er 100 ml tonic over. Roer voorzichtig en garneer met een dun schijfje citroenschil Dit werkt ook uitzonderlijk goed in de mix, vooral in donkere, sterke cocktails zoals een Negroni.

Belsazar White Vermouth With a desire to bring a contemporary twist to Vermouth, Belsazar have taken the creativity and vitality of Berlin and merged it with the tastes, and know-how from the Black Forest area of Germany. They use Grapes and wines from carefully selected wineries to build the base of their Vermouth. To this they add wormwood (and essential component of vermouth), but also other native herbs to ensure a natural character. Finally, their finishing touch is the addition of a 'dash' of fruit brandy from the Schladerer distillery (which has been producing fruit brandies since 1844). After combining the various components, the resulting vermouth is aged for up to three months in neutral stone casks. This allows the development of its complex flavours and aromas (the stone casks ensure no additional flavours, which would occur if aged in wood). Whilst there are a lot of Vermouth's available, Belsazar make theirs that little bit different. Their base wines used to create their white vermouth are a Gewurtztraminer Cuvee and a sweet wine cuvee. It has a mild, enticingly sweet aroma and just a touch of vanilla. The palate has clear notes of dreied peaches and oranges, which are accentuated by the herbal spiciness of a vermouth. (The 'secret' in their white vermouth is a dash of apple brandy from Schladerer!). Lillet Rouge Apéritif For the creation of the original Kina Lillet, Paul and Raymond Lillet took inspiration from Father Kermann, a travelling monk after his return from South America. Upon his return he produced medicinal using herbs and spices. It originally included quinine, and was the French equivalent of a Gin & Tonic to ward off malaria.  Of the three remaining Lillet's available today (Rouge, Rosé and Blanc) their Rouge is the oldest, originally coming to market in 1962. It was created by Pierre Lillet (Raymond's grandson) to capitalise on the growing taste for red wines in America. For their Rouge, Merlot wine (85%) is mixed with macerated sweet Spanish and Moroccan liqueurs (15%) and green orange peels from Haïti. They stir the ingredients in oak vats, and then treat it like a Bordeaux wine during the ageing process On the nose Lillet Rouge has a rich smell of ripe dark fruits. The flavour is full of fresh orange flavours, joined with berries, vanilla and a delicate spice backdrop. At the end typical soft tannins from the ripe fruits linger in the mouth. Moët & Chandon Imperial Brut Champagne With a history which dates back to 1743 (when it was known as Moët et Cie), Moët & Chandon (officially Moët et Chandon) are known as one of the great champagne houses, and are also one of the largest producers of champagne in the world. Fun fact: The T at the end of Moët is pronounced (Mo-et), as the founder was French-born but had a surname of Dutch origin! They own 1,190 hectares (or 2,900 acres) of vineyards, from which they produce approximately 28 Million bottles of champagne annually. This, their Imperial Brut was first introduced in 1869, and is their best-selling brand. It is made from a blend of over 100 different wines - of these, 20 - 30% are reserve wines which are specially selected to enhance the maturity, complexity and constancy of the finished champagne. Between 30 and 40% are Pinot Noir, giving body. 30 - 40% are Pinot Meunier which adds suppleness, and 20 - 30% if chardonnay - giving finesse. The resulting champagne is an elegant golden straw colour, with almost green highlights. The aroma is vibrant, and full of both green apple and citrus fruits. A touch of white flowers leads into an enticing brioche, cereal and fresh nuts bouquet. The palate brings sumptuous notes of pears, apples and peaches. The bubbles almost caress the tastebuds, and open up lively citrus fuits and hints of gooseberry.
