Teeling Single Malt Irish Whiskey With a family history in distilling which dates back to Walter Teeling in 1782, it was no surprise when Jack and Stephen Teeling opened a distillery in Dublin in 2015. In fact, the Teeling Distillery is now the first new distillery in Dublin for over 125 years. They wanted to create a contemporary brand, which, whilst looking to the future they ensure to keep an eye on the past. In this way, they can appeal to the modern whiskey drinker, whilst ensuring traditions are honoured. Part of their 'Unconventional Collection', Teeling's Single Malt (made with 100% malted barley) was eagerly anticipated. This is created using an innovative cask maturation from a selection of five wine-cask finished whiskeys - each of which add a quality to the finished blend. They use no chill filtration in it's creation. Cabernet Sauvignon Finish: Red berry, tannic elements midway through the palate Madeira Finish: Brings hints of ginger Port Finish: Stone fruits, plum, apricot Sherry Finish: Brings depth and body with rich dried fruit influences White Burgundy Finish: Subtle tropical fruit influence, pineapple, passionfruit on the nose This results in an Irish Whiskey which delivers a unique and enticing fruit-forward flavour profile.  It has aromas of fruit - melon, figs and lemon, all of which come through on the nose as well as a sweetness of toffee. On the palate there are rich dried fruits, vibrant citrus and warning vanilla, spice and cloves. The finish has a length sweetness along with dry tannins from the casks. In fact, the Teeling Distillery is now the first new distillery in Dublin for over 125 years. They wanted to create a contemporary brand, which, whilst looking to the future they ensure to keep an eye on the past. In this way, they can appeal to the modern whiskey drinker, whilst ensuring traditions are honoured. For their Stout Cask whiskey (one of their limited edition releases), their unconventional approach has created a whiskey which comes full circle. For many years they have been collaborating with Galway Bay Brewery (a celebrated craft brewey). They send them their used barrels, which had held Teeling's Small Batch Whiskey, and the brewery use them to create stout. That used be where the story finished. However, now they return the barrels (which has been further seasoned with the Imperial Stout), and Teeling finish a whiskey in them. These barrels impart a rich, dark and malty influence to the whiskey. This influence, Teeling believe, is a "true celebration of flavour-focused innovation". On the nose this is a whiskey with notes of dark chocolate and truffles. Hints of sour apples and ocean spray enliven the aroma. On the palate there is sweet malt, roasted barley, sour fruits and interestingly, black cherries. The finish develops into a sweetness of honeycomb, oranges and cream. Teeling Small Batch Irish Whiskey Met een familiegeschiedenis in distilleren die teruggaat tot Walter Teeling in 1782, was het geen verrassing toen Jack en Stephen Teeling in 2015 een distilleerderij openden in Dublin. In feite is de Teeling-distilleerderij nu de eerste nieuwe distilleerderij in Dublin sinds meer dan 125 jaar . Ze wilden een eigentijds merk creëren, waarbij ze, met het oog op de toekomst, het verleden in de gaten houden. Zo kunnen ze de moderne whiskydrinker aanspreken, terwijl tradities in ere worden gehouden. Voor hun small batch whisky zorgt hun onconventionele aanpak voor een whisky met een natuurlijk karakter. Hoewel dit ongetwijfeld een Ierse whisky is, hebben ze uitgedaagd wat dit betekent. Het heeft verschillende smaaklagen die het resultaat zijn van hun onconventionele rijpingsproces op vat. Met behulp van ex-bourbonvaten rijpen ze graan- en maltwhisky's. Dit proces geeft heerlijke tonen van vanille en eikenhout aan de whisky. Eenmaal voltooid, mengen ze deze (3:1 grain to malt) en rijpen ze verder, dit keer in Centraal-Amerikaanse Rum-vaten. Dit proces duurt maximaal 12 maanden, waardoor de whisky een duidelijk en uniek gedroogd fruitprofiel krijgt. Het resultaat van dit proces is iets heel anders. De neus is uitnodigend, met vanille en kruiden die perfect versmelten met heldere zoete tonen van rum. In de mond is er een stevige invloed van het rusten in rumvaten. Hierdoor ontstaat een zachte, zoete en licht houtachtige smaak. Verdere invloeden van de rumshows met fruittonen die naar voren komen, met een zoet-kruidige afdronk die wordt aangevuld met een aanhoudende houtachtige ondertoon. Lees meer over Teeling Perfect Serve Zoals met de meeste whisky's, geniet hiervan zoals je wilt! Recht omhoog of over ijs. Het werkt ook goed in de mix en geeft unieke smaken van de rumvaten. We houden hiervan in een Apple of my Eye-cocktail, die vooral goed werkt in de herfst / winter. Voeg 35 ml van de whisky, 25 ml appelsap, 5 ml honing en 5 ml gemengde kruiden (appeltaartkruiden!) toe aan een cocktailshaker gevuld met ijs en schud tot hij gekoeld is. Zeef in een hoog glas gevuld met ijs en garneer met een paar schijfjes appel

They wanted to create a contemporary brand, which, whilst looking to the future they ensure to keep an eye on the past. In this way, they can appeal to the modern whiskey drinker, whilst ensuring traditions are honoured. For their small batch whiskey, their unconventional approach ensures a whiskey which is full of natural character. Whilst this is undoubtedly an Irish whiskey, they have challenged what this means. It has distinct layers of flavour which are a result of their unconventional cask maturation process. Using ex-bourbon barrels, they age grain and malt whiskies. This process imparts delicious vanilla and oak notes to the whiskey. Once completed, they blend these (3:1 grain to malt) and age further, this time in Central American Rum casks. . This process lasts for up to 12 months, giving the whiskey a distinct, and unique, dried fruit profile. The result of this process is something quite different. The nose is inviting, with vanilla and spice merging perfectly with bright sweet notes of Rum. On the palate there is a solid influence from the resting in rum barrels. This creates a smooth, sweet and slightly woody flavour. Further influence from the rum shows with fruit notes coming through, with a sweet spicy finish which is complimented by a lingering woody undertone. Read more about Teeling Perfect Serve As with most whiskies, enjoy this as you will! Straight up or over ice. It also works well in the mix, imparting unique flavours from the rum barrels. We love this in an Apple of my Eye cocktail, which works particularly well in the autumn / winter. Add 35ml of the whiskey, 25ml of apple juice, 5ml of honey and 5ml mixed spice (apple pie spices!) to a cocktail shaker filled with ice, and shake until chilled. Strain into a tall glass filled with ice, and garnish with a few slices of apple
