Onverwachte smaken en plantaardige ingrediënten worden gemengd, totdat er iets unieks, speciaals en vooral heerlijks ontstaat. Bij hun Vive le Cornichon (hun zesde limited edition) is de ster de kleine cornichon augurk (zoals de naam doet vermoeden!). Deze cornichons zijn afkomstig van Maison Marc (bekend door fijnproevers) in Bourgondië en worden gekweekt zonder insecticiden, herbiciden of conserveermiddelen. Als ze eindelijk klaar zijn voor de oogst, worden ze met de hand geplukt. Hoewel dit als ongebruikelijk kan worden beschouwd, geeft het een verrassend en aanlokkelijk smaakprofiel aan de gin. In de mond zijn er intense tonen van jeneverbes en anijs, gevolgd door een vleugje azijn en zoutgehalte van de augurken. De afdronk is lang, blijft hangen in de mond en doet denken aan mosterd en pareluien. Citadelle Jardin d'été Gin With their newest Gin, Citadelle have taken inspiration from a summer garden. It contains no less than 22 different perfectly blended botanicals, including lesser-known botanicals such as Szechuan pepper and savory. The Citadelle Jardin d'Été (Summer Garden) has a intensely fresh nose with scents of citrus fruit (coming from yuzu, orange peel and candied lemon) and juniper berries being instantly recognizable. Behind these are more floral scents (violey), and a delicate spicy touch from fennel and a little licorice. On the palate, the freshness found in the aroma continues and the floral flavour can still be found. These floral notes are accompanied by a deliciously light spiciness and a fruity character from melon and mandarin. The spiciness becomes more noticeable towards the end and warming nutmeg and angelica greet you. The total 22 botanicals used in the blending of this delicious new gin are: Juniper, whole lemons, and lemon zest, melon, orange zest, yuzu zest, iris root, almond, fennel, star anise, cardamom, violet, nutmeg, coriander, cubeb pepper, cassia, licorice, savory, sichuan pepper, angelica, cumin and cinnamon. Citadelle Reserve Gin 70cl

Citadelle Reserve Gin Sinds 1996 is Château de Bonbonnet in het zuidwesten van Frankrijk de thuisbasis van Citadelle Gin. Citadelle is trots op zijn geografische ligging en hieruit halen ze inspiratie. Hun doel was om de essentie van hun regio te distilleren tot een perfect knapperige spirit, wat ze deden met hun klassieke Citadelle Gin. In 2008 deed Citadelle met hun reserve-gin iets dat al meer dan een eeuw niet meer was gedaan: barrel-aging gin. Vroeger was dit gebruikelijk bij jenever die in houten vaten werd vervoerd vanwege de kwetsbaarheid van glas in die tijd en omdat plastic en staal niet beschikbaar waren. Net als bij hun originele gin, kost het proces tijd. Na veel experimenteren werd het recept geperfectioneerd. Er zijn 3 botanicals toegevoegd, namelijk yuzu, genepi en bleue. De gin wordt vervolgens gedurende vijf maanden in vijf verschillende soorten houtvaten (Acacia, Mulberry, Cherry, Chestnut en French Oak) gelegd. Daarna worden ze met elkaar vermengd tot een eikenhouten vat. Het unieke rijpingsproces dat wordt gebruikt, versterkt de citrustonen van Citadelle Reserve Gin en zorgt voor een elegante zachtheid in de mond. De kleur van deze gin is een heerlijke zachte goudkleur. Het aroma verschilt van de klassieker met kruidachtige gedroogde kruiden, oranjebloesem en zelfs een beetje tabak. Dit ontwikkelt zich dan verder en jeneverbes en groene thee maken zich bekend. Wat betreft de smaak: de eerste noot is zijdezacht met een vleugje kruiden en peper. Het werkt uitzonderlijk goed in een Gin Martini, puur op ijs nippen, of in een klassieke gin-tonic. Voor een gin tonic raden we deze aan met Fever-Tree Premium Indian Tonic. De milde bittere sinaasappelolie in deze tonic versterkt de citrustonen perfect in de gin. Neem 50 ml van de gin en giet het in een groot glas gevuld met ijs. Citadelle No Mistake Old Tom Gin Sinds 1996 is Château de Bonbonnet in het zuidwesten van Frankrijk de thuisbasis van Citadelle Gin. Citadelle is trots op haar geografische ligging, en hieruit halen ze inspiratie. In 1836 verwonderde Charles Dickens zich in een van de vele bars die hij vaak bezocht over "de vindingrijkheid die werd gebruikt om bijwoorden aan gin te geven, met de ene term verleidelijker dan de andere, om het op meerdere manieren te beschrijven." Een van deze bijnamen was "No Mistake" en Citadelle vond het passend voor hun Old Tom gin. Old Tom gin's waren in de 19e eeuw populair in Engeland en Citadelle wilde dit in gedachten houden. Dit waren gezoete gins, en tijdens reizen in de Caraïben werd een bruine suiker (vergelijkbaar met Demerera) ontdekt. Vochtig en zwaar, het was het ontbrekende ingrediënt waar Citadelle naar op zoek was. De Old Tom gin bestaat uit het mengen van Citadelle Réserve (gebruikt vanwege zijn bloemige noten), met oude suiker. Dit wordt vervolgens terug in vaten geplaatst en (opnieuw) enkele maanden gerust. Het resultaat is een gin met een prachtige gouden kleur. Het aroma is fris en krachtig - jeneverbes, de schil van sinaasappel en kardemom komen vroeg naar voren, voordat kruiden- en bloemige aroma's doorkomen (jasmijn en kamperfoelie), en een zoete koffie-achtige geur. In de mond is deze heerlijk vol en elegant. Het heeft een zoet profiel zoals te verwachten is met de toegevoegde suiker, maar dit vermengt zich met andere smaken en is perfect in balans. Citroenschil, anijs en amandel worden gecombineerd met warme kruidentonen van nootmuskaat, kaneel en cubeb-peper. De afdronk is lang. Bloemig, met meer houtachtige, gekruide tonen en hints van zoethout. Deze worden gedurende één tot vier dagen toegediend, afhankelijk van hun smaakprofiel. Dit is cruciaal zodat Citadelle zijn volle smaakprofiel kan krijgen. Daarna wordt het gedestilleerd in kleine koperen ketels boven open vuur om zijn soepelheid en volle ronde karakter in de mond te ontwikkelen. Citadelle Gin straalt subtiele aroma's van verse bloemen uit die worden benadrukt door meer assertieve citroengeuren. In het glas straalt het meer intense, kruidachtige tonen van jeneverbes en anijs uit; wat vervolgens wordt gevolgd door de pittige kaneelkant die de neus verzacht. Dit geeft een zeer gourmand dimensie aan de gin. In de mond is de jeneverbes naar voren, maar geeft af aan een lange, wulpse, kruidige geur. Citadelle Juniper Décadence Gin 70cl

Citadelle Juniper Décadence Gin What better way to celebrate 25 years of Citadelle Gin than by launching an exquisite limited edition? Citadelle have created their Juniper Décadence Gin which is a homage to the juniper tree (the star of the show in all gins). The juniper trees grow naturally in the Charentes region of France, indeed they are even cultivated in front of the Château de Bonbonnet (the home of Citadelle gin). They took inspiration from the historical practise of ageing and storing gin in wood (similar to wine and other spirits). Whilst this has generally fallen out of practise, it is now regaining in popularity due to the additional flavours imparted in the gin. For their Décadence gin, they take their signature recipe (used to create the original Citadelle gin), which has its 19 botanicals. They then rest the gin in wooden barrels, which have been made of juniper wood. This process takes a month. These barrels have been custom designed, have a conical shape and hold 100L of the gin. The process of resting ensures a smokiness from the wood amplifies the herbal notes in the original recipe. The result is a gin with a silkiness, which perfectly coats the mouth. There is an intruiging bittersweetness and the smokiness which merge with the juniper notes. Pepper, coconut, ginger and nutmeg also come through and are enhanced with cinnamon, anise and licorice. However the floral notes are definitely still present, with camphor and angelica present too which unfold as the drink is enjoyed. Thie aim was to distill the essence of their region into one perfectly crisp spirit. It takes time to make Citadelle gin. There are 19 botanicals that make up the original Citadelle. These are infused, depending on their flavour profile, for between one and four days. This is crucial so that Citadelle can acquire its full flavour profile. After this, it is then distilled in small copper stills over open flames in order to develop its suppleness and full rounded character in the mouth. Don't be confused by the name... this isn't a red, or a pink gin - there are no artificial colours or flavours in this bottle! The Rouge (red) refers to the flavours you will find. This is infused with fresh berries (cranberry, raspberry, blackberry, blackcurrant) as well as the summer favourite rhubarb. These ensure a flavour fuelled aroma and drink. Building on the dry gin and original botanicals, this gives an intense burst of tart berries (it's certainly not overly-sweet), and the tang found in rhubarb. It's definitely fruit-forward on the flavours, with the red fruits enticing the palate perfectly - whilst remaining crystal clear in your glass!
