6 O'Clock Five Year Aged Sloe Gin "Good things come to those who wait...." Het is misschien lang wachten (vijf jaar), maar we zijn erin geslaagd om wat van deze heerlijke oude Sloe-gin te krijgen Het merendeel van de (commerciële) sleedoorn gins wordt een paar maanden gerookt om de smaken uit de sleedoorns te halen, en hoewel dit een heerlijk fruitige sleedoorn gin oplevert, is er nog veel meer te geven. 6 O'Clock nam hun (al bekroonde) London Dry-gin en liet deze vijf jaar lang hun sleepruimen trekken. Eenmaal voltooid, bottelden ze de vloeistof in een zeer beperkte oplage van slechts 1.000 flessen. Het resultaat hiervan is echt iets heel speciaals, en heel onverwacht als je een traditionele sleedoorn gin had geprobeerd. Het heeft een donkerdere, rijkere kleur dan traditioneel wordt gezien in sleedoorn-gins, en het smaakprofiel verschilt ook, zoals uitgelegd door hun meester-distilleerder Edward Kain: “The longer you leave it, the more colour and flavour is extracted from the sloes. I knew if the gin was left on the sloes for a very long time it would eventually start to oxidise. During this oxidisation process the Sloe Gin would darken and lose all its tartness, becoming ‘lush’ like a vintage tawny port – rich, mellow and full of flavour” Op de neus zijn er zeker noten die aantonen dat dit een sleepruimengin is met de aroma's van marsepein en de pruimachtige geur van de sleepruimen. Met een pittige fruitigheid rond de randen, zijn er amandel- en diepe en heerlijke sleedoornsaroma's (die doen denken aan gebakken pruimen). Een vleugje melasse-zoetheid ook, maar zeker niet de overheersende smaak. De afdronk is lang, heerlijk en nodigt je zeker uit voor een tweede slok!
